Christina's Pizza Dough

from The Food Network


  • 1/4 cup light red or white wine, Fiano di Avellino (or water, in my case)
  • 3/4 cup warm water
  • 1 1/2 ounces fresh yeast
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 tablespoon plus 1 tablespoon olive oil
  • 3 1/2 cups flour

Directions

Place wine, water and yeast in a large bowl and stir until dissolved. Add the honey, salt and 1 tablespoon olive oil and mix well to combine. Add 1 cup of the flour and mix with a wooden spoon until it becomes a loose batter. Add 2 more cups of the flour and stir for 2 to 3 minutes, incorporating as much flour as you can with the wooden spoon.
Bring the dough together by hand and turn out onto a floured board or marble surface. Knead for 6 to 8 minutes, until dough is smooth and firm. Place in a clean, lightly-oiled bowl, using remaining tablespoon of oil and cover with a towel. Let rise in the warmest part of the kitchen for 45 minutes.
For individual pizzas or calzones, cut the dough into 4 equal pieces and knead into rounds. For one large pizza, knead into 1 large round. For either, let rest for 15 minutes.

Christina's Blueberry Muffins

from my mom


2 c blueberries
¼ c flour
1 ¼ c white flour
¾ c whole wheat flour
¾ c sugar
2 tsp cream of tartar
1 tsp baking soda
½ tsp salt
6 Tbsp butter
¾ c milk
1 egg, lightly beaten
½ tsp vanilla


Preheat oven to350*. Grease & flour muffin tins. Place blueberries and 1/4 cup flour in small bowl and gently stir. Set aside. Stir dry ingredients including sugar together in large glass bowl. Cut butter into flour mixture until it resembles small peas. Combine wet ingredients in measuring cup. Stir into flour mixture just till mixed. GENTLY fold in berries. Divide out into muffin tins. Bake 25-30 minutes.

Christina's Grilled Mozzarella Sandwiches

  • 1 pound fresh buffalo mozzarella, cut into 4 equal pieces about 3-inches by 4-inches
  • 8 1/2-inch thick firm white sandwich bread
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme, leaves
  • 1 teaspoon coarse salt
  • A grating of nutmeg
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • Marinara sauce for dipping

Directions

  1. Place the mozzarella on 4 slices of the bread. Cover with the remaining slices to form sandwiches. Trim the crusts off to make perfect 4-inch squares.
  2. In a wide shallow bowl, whisk the eggs. Add the cream, thyme leaves, salt, and nutmeg. Whisk until well blended.
  3. In a 10 to 12-inch nonstick saute pan, heat 2 tablespoons of olive oil over medium-high heat until smoking. Add 1 tablespoon of the butter and cook until the sizzling subsides. Dip 2 of the sandwiches into the egg mixture, turning to coat, place in the pan, and cook until golden brown on the first side, about 2 minutes. Flip over and brown on the other side. Transfer the sandwiches to individual plates and repeat the process with the remaining 2 tablespoons olive oil, 1 tablespoon butter, and 2 sandwiches. Cut in half, and serve immediately with a side of marinara sauce.

Christina's Honey Whole Wheat Bread for Sandwiches

3 tablespoons yeast
4 cups really warm water
1/2-3/4 cup honey
8-10 cups whole grain wheat flour (freshly ground if possible)
1 TBSP kosher salt
2 TBSP vital wheat gluten (optional)
2 TBSP flax seed meal (optional)
2 TBSP wheat germ (optional)
butter

1. Grind wheat.
2. Add yeast, water, and honey then gently mix.
3. Let rest for 5 minutes until yeast foams.
4. Then add salt and everything else.
5.  Then add flour, I add a cup at a time until it pulls away from the side of the bowl. 
7. Knead for 4-6 minutes. This dough is really sticky and you are going to think that you need to add more flour, but you only want to add enough flour that the dough barley pulls away from the bowl.
8. Let dough rise for 15 minutes.
9. Butter the bread pans (I do 2 9x5 pans and 1 8 1/2x 4 2/12 inch pan) and your hands. Punch down the dough well.
10. Form into loafs and put into greased loaf pans. 
11. Let rise in pans for 30 minutes.
12. Bake in 350 degree oven for 30 minutes.
14. Remove from pans after 10 minutes and let cool on a cooling rack.

Christina's Pumpkin Bread

1/2 C butter
1 C sugar
2 eggs
3/4 C canned pumpkin
1 3/4 C flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp dry ginger
1/4 tsp ground cloves
3/4 C chocolate chips (optional)
3/4 C chopped pecans (optional)

Cream butter and sugar. Add eggs and mix well. Add pumpkin and mix. Set aside. Sift dry ingredients in a large bowl. Gradually add dry ingredients to creamy mixture. Beat until blended. Add chocolate chips and pecans if using.

Grease one bread pan (or four mini loaf pans). Bake at 350 F for 1 hour for large loaf or 35-40 minutes for mini loaves.

Christina's Oatmeal Wheat Bread

This bread is sturdy enough to work for sandwiches. Yay!


2 cups milk
1 cup old-fashioned rolled oats plus additional for topping (optional)
1/2 cup warm water (105-115°F)
7 teaspoons active dry yeast
1/2 cup mild honey
1/4 cup unsalted butter, melted and cooled, plus additional for buttering pans
3 cups stone-ground whole-wheat flour
About 1 3/4 cups unbleached all-purpose flour
2 TBSP flax seed meal
2 TBSP wheat germ
2 TBSP vital wheat gluten
1 tablespoon salt
Olive oil or butter for oiling bowl
1 large egg, lightly beaten with 1 tablespoon water (optional)

Heat milk in a 1 1/2- to 2-quart saucepan over low heat until hot but not boiling, then remove pan from heat and stir in oats. Let stand, uncovered, stirring occasionally, until cooled to warm.

Stir together water, yeast, and 1 teaspoon honey in a bowl; let stand until foamy, 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) Stir yeast mixture, melted butter, and remaining honey into cooled oatmeal.

Stir together whole-wheat flour, 1 1/2 cups unbleached flour, flax seed meal, wheat germ, gluten and salt in standing-mixer bowl. Add oat mixture and knead with dough hook, adding just enough of remaining unbleached flour to keep from sticking (up to 1/4 cup), until dough is smooth, soft, and elastic, about 10 minutes (dough will be slightly sticky). Form dough into a ball and transfer to an oiled or buttered large bowl, turning to coat. Cover bowl loosely with plastic wrap and a kitchen towel; let rise at warm room temperature until doubled in bulk, 1 to 1 1/2 hours.

Lightly butter loaf pans. Turn out dough onto a lightly floured surface and knead several times to remove air. Divide dough in half and shape each half into a loaf, then place 1 loaf in each buttered pan, seam side down, tucking ends gently to fit. Cover loaf pans loosely with a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 1 hour.

Put oven rack in middle position and preheat oven to 375°F. Lightly brush tops of loaves with some of egg wash and sprinkle with oats, then bake until bread is golden and loaves sound hollow when tapped on bottom, 35 to 40 minutes. (Remove 1 loaf from pan to test for doneness. Run a knife around edge of pan to loosen.)

Remove bread from pans and transfer to a rack to cool completely, about 1 1/2 hours.

Christina's Whole Wheat Raspberry Ricotta Scones

If you have white whole wheat, you can use two cups of it instead of the split flour ratio here.


1 cup whole wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1/2 teaspoon table salt
6 tablespoons cold unsalted butter
1 cup fresh or frozen raspberries
3/4 cup whole milk ricotta
1/3 cup heavy cream

Preheat oven to 425 degrees. Line a large baking sheet with parchment paper. In the bottom of a large, wide-ish bowl, whisk flours, baking powder, sugar and salt together.

Add the butter and use the blender to both cut the butter into the flour mixture until the biggest pieces are the size of small peas. Toss in raspberries and use the blender again to break them into halves and quarter berry sized chunks.


Add the ricotta and heavy cream together and stir them in to form a dough with a flexible spatula.Using your hands, gently knead dough into an even mass, right in the bottom of the bowl.\

With as few movements as possible, transfer the dough to a well-floured counter, flour the top of the dough and pat it into a 7-inch square about 1-inch tall. With a large knife, divide the dough into 9 even squares. Transfer the scones to prepared baking sheet with a spatula. Bake the scones for about 15 minutes, until lightly golden at the edges. Cool in pan for a minute, then transfer to a cooling rack. It’s best to cool them about halfway before eating them, so they can set a bit more.

Christina's Spiced Banana Bread

adapted from Sherbet Blossoms

1 1/2 cups sugar
2½ cups whole wheat flour
1 tsp salt
1 tsp soda
2 tsp cinnamon
1 1/2 tsp nutmeg
1/2 tsp baking powder
1 cup oil (or applesauce)
3 eggs
2 cups mashed bananas
1 tsp vanilla

Combine dry ingredients. Combine wet ingredients. Mix together and pour into greased bread pans (2). Bake for 1 hour at 350°.

Christina's Alternative Grilled Cheese

pesto
butter

Put the cheese, pesto and spinach inside the bread. Butter the outsides and grill like a normal grilled cheese sandwich. Enjoy!

Christina's Pumpkin Waffles

adapted from Smitten Kitchen


2½ cups all-purpose flour ( or 1 1/2 C white and 1 C whole wheat flour)
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 TBSP pumpkin pie spice (or 2 tsp cinnamon, 1 tsp ginger and 1/4 tsp cloves)
4 large eggs, separated
2 cups well-shaken buttermilk
1 cup canned solid-pack pumpkin
3/4 stick (6 tablespoons) unsalted butter, melted

Preheat waffle iron.

In a mixing bowl with a whisk attachment, whisk the egg whites until they hold soft peaks.

Sift together flour, brown sugar, baking powder and soda, salt, and spices.

Whisk egg yolks in a large bowl with buttermilk, pumpkin, and butter until smooth. Whisk in dry ingredients just until smooth. Fold egg whites gently into the waffle batter, until just combined.

Cook on waffle iron according to manufacturer instructions. Serve with cinnamon syrup.

Christina's Pumpkin Donuts with Spiced Sugar

My father-in-law said these were the best donuts he's has in years.

3 1/2 cups all purpose flour
4 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/8 tsp ground nutmeg
1 cup sugar
3 tbsp butter, softened
2 eggs
1 tsp vanilla
1/2 cup plus 1 tbsp buttermilk
1 cup cooked, mashed pumpkin (canned is ok)
Canola oil (for deep-frying)

Spiced Sugar
1 cups sugar
3/4 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp ground cloves
dash ground nutmeg

Whisk together flour, baking powder, baking soda, salt and spices in a medium bowl. In a large bowl, cream together butter and sugar. Beat in eggs one at a time. Add in vanilla, buttermilk and pumpkin. Gently stir in flour mixture until fully incorporated. Cover bowl with plastic wrap and refrigerate at least 3 hours or overnight if desired. That way you can have donuts first thing in the morning with minimal fuss!

Working with 1/3 of the dough at a time, press the chilled dough out, on a lightly floured surface, to about 1/2 inch thickness. Cut into donuts using donut cutter or roll it all into small donut holes. Repeat until all the dough is used. You may reroll the scraps. You should end up with about 24 donuts and 24 holes.

In a large sauce pan, heat 2-3 inches of oil to 365F/185C. Make a thick stack of paper towels to drain the donuts on. Fry the donuts until golden brown, about 1 minute per side. Monitor the temperature to make sure it remains constant. Remove dough to drain and cool thoroughly on paper towels.

In bowl, whisk together sugar and spices. Coat donuts and donut holes in sugar mixture. Eat while warm.

Ben's Cornbread, Sausage and Apple Stuffing

My husband is a much better cook than I am, at least when it comes to be inspired and making up new recipes. This is the stuffing he made for Thanksgiving (his first time ever making stuffing, I might add) and it turned out great! For those of you still in doubt, the first time he ever made chili he won a chili cookoff. Yeah, he's that good.

6 C cornbread (1 paula deen recipe), cubed and dried
6 C white bread, cubed and dried
1 lb mild italian sausage
2 TBSP unsalted butter
2 small or 1 med-large Granny Smith apples
1 C chopped celery
1 small-medium onion
1/3 C dried cranberries
1 tsp ground sage
1 tsp parsley
1 tsp thyme
1/4 tsp black pepper
3 C chicken broth

Place all bread cubes in a large bowl. Sprinkle with all seasonings and stir.

Brown sausage. Remove meat from pan, but keep drippings. Add onion, celery and apples to pan with butter and saute until soft. Add cranberries for the last few minutes to rehydrate.

Add sausage, veggie mix and chicken broth to bread and stir to coat. Place in 9x13 pan or 2 9x9 pans. Bake 30 minutes for 9x13 pan or 20 minutes for 2 9x9 pans.

Lorri's Breadsticks

1 Tbsp yeast
1 ½ cups warm water
2 Tbsp sugar
1 ½ tsp salt
3 cups flour

Dissolve yeast and sugar into warm water. Mix salt and flour together and then knead in yeast mixture for 3 minutes. Let rest for 10 minutes.

Grease 2 cookie sheets with butter or shortening. Roll out dough to ¼ inch thick on floured surface. Cut into sticks ½ inch wide. A pizza cutter makes this very easy! Place on cookie sheet and brush with melted butter. Sprinkle with garlic salt, sesame seeds, and grated parmesan cheese. Let rise ½ hour. Bake at 375° for 20 minutes.

Christina's Scalloped Tomatoes

2 tablespoons olive oil
3 cups bread from French or Italian bread, whatever you have, in a 1/2-inch dice
2 1/2 pounds good tomatoes, cut into 1/2-inch dice
1 tablespoon minced garlic
2 tablespoons sugar
2 teaspoons Kosher salt
1 teaspoon freshly ground black pepper
1/2 cup thinly slivered basil leaves, lightly packed (or 3 TBSP dried)
1 cup freshly grated Parmesan cheese

Preheat the oven to 350°F. Heat olive oil in a large sauté pan over medium-high. Add the bread cubes and stir so that they are evenly coated with oil. Cook cubes, tossing frequently, until toasty on all sides, about 5 minutes.

Meanwhile, combine tomatoes, garlic, sugar, salt and pepper in a large bowl. When the bread cubes are toasted, add the tomato mixture and cook them together, stirring frequently, for 5 minutes. Remove from heat, and stir in the basil. Pour into a shallow (6 to 8 cup) baking dish and top with Parmesan cheese. Bake 35 to 40 minutes until the top is browned and the tomatoes are bubbly. Serve hot or warm with a big green salad, a bean salad and/or a poached egg.

This also works well as a chunky tomato sauce for pasta dishes.

Christina's Basic Baked Scones

from Our Best Bites

1/3 C real butter
1 ¾ C Flour
3T sugar
2/1/2 t baking powder
¼ t salt
1 egg, beaten
6 T milk
Heat oven to 400 degrees.
Mix flour, sugar, baking powder, and salt. Cut in butter with pastry blender until it resembles fine crumbs.
Combine egg and 4T milk. Slowly pour milk mixture into dry mixture while mixing with a fork to combine.

Gently pat dough into a circle, about 1/2 inch thick. Brush top with milk or beaten egg and sprinkle liberally with sugar, if desired.

Cut into 6 wedges and separate on a cookie sheet. Bake 10-12 minutes. The tops will not brown, but the bottoms will be golden-brown and the tops set. Keep an eye on them and don't over-bake.

Lorri's Cottage Cheese Biscuits

I realize Christina has already posted her ultimate biscuit, which I have been meaning to try since I saw it on smittenkitchen but haven't yet. This is another alternative to baking powder biscuits for days when you bought a large vat from Costco on a craving and now it never piques your interest. They are delicious!
Taken straight from the Food Network - I didn't change a thing.

2 cups all purpose flour
1/2 teaspoon coarse salt
1 tablespoon baking powder
5 tablespoons unsalted butter, cold, cut into small pieces
1 16-oz. container low fat cottage cheese

Directions

Preheat oven to 450. In a large bowl or the bowl place flour, salt and baking powder. Stir until combined. Add butter and mix until the size of small peas. Add the cottage cheese and stir until just combined.
Using a large spoon, drop onto a non-stick cookie sheet. Bake until golden, about 12-15 minutes. Serve immediately.

Christina's Cream Biscuits

I don't usually make comments since this blog is just for my own personal use, but to any friends and family members who might read this, you need to go make these biscuits. They are super easy, only have a few ingredients (I made them without the sugar) and are the best biscuits that I have ever made. I'm throwing away all my other recipes. No joke. Also, I think they would work well with whole-wheat flour, although you'd obviously need to adjust the amount to make up for the difference in absorption.

2 tablespoons melted butter
2 cups all-purpose flour, plus more for dusting the surface
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar (optional)
1 1/2 cups heavy cream

Preheat the oven to 425°F. Melt butter in a small pot or microwave dish, and set aside. Sift two cups flour, the baking powder, salt and (if using) sugar into a large bowl. Fold in 1 1/2 cups cream.

Turn dough onto a floured surface, mound it into a ball and, using your hands, press it to a thickness of about 3/4 inch. Cut into rounds 2 1/2 inches in diameter. Gather dough scraps and continue to make rounds. Brush the top of each round generously with butter. Bake until golden, 12 to 15 minutes. Serve immediately. Die of happiness.

Christina's Cranberry Muffins

3/4 c halved cranberries
1/2 c powdered sugar
Mix berries and sugar and let stand.

Sift together:
1 1/2 c flour
1/2 c whole-wheat flower
1 T baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/4 c sugar

Mix and add to dry ingredients:
1 egg, beaten
1 c milk
1/4 c butter, melted

Mix until dampened, do not beat.
Fold in berries.
Put in greased muffin cups.
Bake 20 minutes at 350.
Makes one dozen.

Christina's Pumpkin Cupcakes/Muffins

Top with cream cheese frosting or streusel.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1 cup packed light-brown sugar
1 cup granulated sugar
1 cup (2 sticks) unsalted butter, melted and cooled
4 large eggs, lightly beaten
1 can (15 ounces) pumpkin puree

Directions

Preheat oven to 350 degrees. Line cupcake pans with paper liners; set aside. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice (toss in 1/2 c chopped pecans if desired); set aside.

In a large bowl, whisk together, brown sugar, granulated sugar, butter, and eggs. Add dry ingredients, and whisk until smooth. Whisk in pumpkin puree.

Divide batter evenly among liners, filling each about halfway. Bake until tops spring back when touched, and a cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating pans once if needed. Transfer to a wire rack; let cool completely.

White Chocolate/Cream Cheese Icing

14 oz. pure white chocolate, finely chopped
12 oz. cream cheese, at room temperature, cut into tablespoon-size pieces
12 Tbsp. (1 ½ sticks) unsalted butter, at room temperature, cut into tablespoon size pieces

To make the icing, in a double boiler, melt the white chocolate, stirring constantly, until smooth and creamy, 2 to 3 minutes. Let stand until just warm to the touch. In a large blow, using an electric mixer, beat the cream cheese and butter on medium-high speed until smooth and blended. Add the melted chocolate and beat again until smooth. Use the frosting immediately, coloring as desired. Spread 1 to 2 tbsp. of icing over each cupcake and decorate with colored sugars and decorating pens.

Christina's Soda Scones

2/3 c butter or margarine, melted
1/3 c milk
1 egg
1 1/2 c all-purpose flour (I use 1/4 c whole wheat)
1 1/4 c quick oats, uncooked
1/4 c sugar
1 Tbsp baking powder
1 tsp cream of tartar
1/2 tsp salt

Preheat oven to 425. Add butter, milk and egg to combined dry ingredients; mix just until dry ingredients are moistened. Shape dough to form ball; gently pat out on lightly floured surface to form 8-inch circle. Cut into 8-12 wedges; Bake on greased cookie sheet in preheated hot oven 12-15 minutes or until light golden brown. Serve warm at breakfast or brunch with butter, preserves or honey.
