Christina's Honey-Walnut Pie

from Morgan Crumm

1 unbaked pie crust, fitted into a greased pie pan, placed on a baking sheet
2 cups walnut halves
3 large eggs
1 ¼ cups brown sugar
1/3 cup honey
4 T melted butter
¼ tsp fine salt
1 tsp pure vanilla extract
¼ cup flour
¼ tsp cinnamon
Dash cardamom

Preheat the oven to 350 degrees Fahrenheit, and make sure a rack is positioned in the center of the oven.

Prick the bottom of the pie crust all over with a fork.
Spread the walnuts out evenly in the unbaked pie crust. In a medium-sized bowl, whisk together the remaining ingredients. Pour this mixture over the walnuts. Cover the pie with aluminum foil, and bake for 35 minutes. Carefully remove the foil, rotate the pan in the oven, and bake an additional 32-35 minutes.  Don’t worry if the pie cracks slightly--this is normal and can actually be a good indication that the pie has cooked enough to set.

Allow the pie to cool at least 20 minutes to set before cutting.

The pie will keep, covered with aluminum foil, at room temperature for up to 5 days, but it is best eaten within 1-2 days.

Christina's Red Velvet Cake with Beets

from Sophistimom

2 large beets (enough for at least 1 1/2 cups puree)
1/4 cup freshly squeezed lemon juice (juice of one lemon--if your lemon yields slightly too little juice, don't add more!)
1 cup coconut oil (chilled)

1 cup buttermilk
2 2/3 cups sugar
4 eggs
1 1/2 teaspoons pure vanilla extract
2 cups unbleached all-purpose flour
1 1/2 tsps baking powder
1 1/2 tsps kosher salt
4 TBSPS natural (not dark or dutch processed) cocoa powder

1. Preheat oven to 350 degrees. Place beets in a small baking dish and add a 1/2 cup of water. Cover with parchment paper and foil, and roast until quite tender, about 60-90 minutes. Allow to cool completely.
2. Butter 3 8 inch cake pans (I used 2 9-inch pans and then made some cupcakes with the extra batter). Cut out parchment paper circles and place in the bottoms of the pans. Butter the parchment paper and dust with flour. Set aside. Peel the beets and cut into large chunks. Place in a food processor (or a very good blender) with the lemon juice, and pulse until smooth and pureed.
3. In a mixer fitted with the paddle attachment, beat together coconut milk and sugar. Add in eggs, one at a time, mixing well until each is incorporated. Mix in vanilla. Set in refrigerator to chill.

4. While ingredients are mixing, whisk together four, baking powder, salt, and cocoa powder in a separate bowl. Slowly add flour mixture to the wet ingredients. Measure out 1 1/2 cups of the beet puree mixture, and fold into the cake batter. Divide the batter evenly between the cake pans. Tap pans on the counter to remove any air bubbles.
5. Bake at 350 degrees for 20-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Invert cakes onto cooling racks, and allow to cool completely. Wrap in plastic wrap and refrigerate or freeze until ready to frost.

Cream Cheese Frosting

2 sticks (16 tablespoons) unsalted butter, at room temperature
1 pound (4 cups) confectioner’s (powdered) sugar
2-3 tablespoons heavy cream
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract

Combine all ingredients in the bowl of an electric mixer fitted with the paddle attachment. Switch to the whisk attachment, and mix until smooth and slightly fluffy.

Christina's Rhubarb Crisp

from marthastewart.com

  • 12 tablespoons chilled (1 1/2 sticks) unsalted butter, cut into small pieces, plus more for ramekins or baking dish
  • 1 cup plus 1 1/2 tablespoons all-purpose flour
  • 1/2 cup packed dark-brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup old-fashioned rolled oats
  • 2 pounds (6 large stalks) rhubarb, cut into 1/2-inch pieces (6 cups)
  • 1 teaspoon grated orange zest
  • Juice of 1 orange
  • 1 vanilla bean, split and scraped (or 1 tsp vanilla extract)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch

Preheat oven to 350 degrees. Butter six 8-ounce ramekins (or a 2 1/2-quart shallow casserole), and set aside. Make crumb mixture: In a large bowl, whisk together flour, brown sugar, cinnamon, nutmeg, salt, and oats. Using a pastry cutter or two knives, cut in chilled butter until mixture comes together into clumps, about 4 to 5 minutes; set aside.

In a large bowl, stir to combine rhubarb, zest, orange juice, and vanilla seeds. In a small bowl, combine sugar and cornstarch; sprinkle over rhubarb until just coated. Pour 1 cup rhubarb mixture into each ramekin, and top with 1/2 cup crumb mixture. Bake until the rhubarb is tender when pierced with the tip of a knife, about 30 minutes (or about 45 minutes for the casserole). Transfer from oven to a cooling rack. Let cool slightly, and serve warm with vanilla ice cream.

Christina's Pollo Paplanta

from What I Made for Dinner

6 chicken thighs (about 2 pounds)
1 teaspoon salt
1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
1/3 teaspoon cayenne pepper, or to taste
2 large garlic cloves, finely chopped
2 tablespoons cider vinegar, Japanese rice vinegar, or other mild-flavored vinegar
1 tablespoon butter
1 1/2 cups fresh orange juice
1 vanilla bean, split
A few sprigs of cilantro, for garnish
Cooked rice or tortillas for serving (optional).

1. Season chicken with the salt and 1/4 teaspoon black pepper. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces skin side down, and brown until golden on both sides, turning once, 3 to 5 minutes on each side.
2. When chicken is browned, pour off any excess fat from skillet and return to medium heat. Sprinkle cayenne and 1/8 teaspoon black pepper over chicken, turning pieces to coat evenly. Taste a pinch of the skin, and add more cayenne if additional heat is desired. Add garlic and sauté for 1 minute. Add vinegar, butter and orange juice. Scrape in pulp of vanilla bean and add bean. Stir liquid to blend.
3. Cook chicken skin side up, uncovered, basting occasionally with sauce, until sauce is reduced to a syrupy glaze, 20 to 25 minutes. If interior of chicken needs further cooking (it should be 170 degrees when tested in center with an instant-read thermometer), cover and cook over medium-low heat for an additional 5 to 10 minutes, or as needed. Garnish with cilantro. Serve hot, with rice or tortillas, if desired.

Christina's Rhubarb Shortbread

For the Jam

1 pound rhubarb, trimmed and cut into 1-inch pieces
1/2 cup granulated sugar
1/2 cup water
1 vanilla bean

For the Shortbread

4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 pound (4 sticks) unsalted butter, room temperature
4 large egg yolks
2 cups granulated sugar
Confectioners' sugar, for dusting

Make the jam: Combine rhubarb, sugar, and 1/2 cup water in a medium saucepan. Split vanilla bean, scrape the seeds into the pan, and toss in the pod. Bring to a simmer over low heat, cook, stirring often, until rhubarb softens and forms a soft mass, about 10 minutes. Remove and discard vanilla bean. Transfer to a shallow bowl and let cool. Can be made ahead and refrigerated in an airtight container, for up to one week. If refrigerated, return to room temperature before using. You may substitute 1 cup of your favorite jam or preserves for the homemade.

Make the shortbread: In a medium bowl, whisk together flour, baking powder, and salt. In the bowl of an electric mixer fitted with the paddle attachment, beat butter on high speed until pale and fluffy. Add egg yolks and sugar, and beat until sugar is dissolved and the mixture is light. Reduce mixer speed to low, and add the dry ingredients, mixing only until the ingredients are incorporated.

Turn the dough out onto a work surface and cut into two pieces. Shape each piece into a ball and wrap in plastic wrap. Place in freezer until firm, about 30 minutes. Can be made ahead and frozen for up to one month. Thaw in refrigerator overnight.

Assemble and bake: Preheat oven to 350 degrees with rack in center. Remove one ball of dough from freezer and, using the large holes on a box grater, grate the dough into a 9-by-13-inch baking dish. Pat the dough gently just to get it into the corners (you don't want to press it down), and spread with the rhubarb jam. Grate the remaining dough over the jam, and press it lightly to distribute it evenly. Bake until golden brown, about 40 minutes. Dust with confectioners' sugar as soon as it is removed from oven. Cool on a wire rack.

Cut the shortbread into bars when it is cool. You can cut whatever size bars please you, although as a rough guide, 3-inch squares, or rectangles 1 1/2 inches by 3 inches make nice servings. Store covered at room temperature for up to 2 days.
