Christina's Curried Chicken and Mushroom Spring Rolls

from McCormick

1 tablespoon red curry powder
1 teaspoon garam masala
2 cups thinly sliced cooked chicken
2 tablespoons oil
1 pound assorted wild mushrooms (such as shiitake, oyster and cremini), sliced (or whatever you have)
1 red bell pepper, thinly sliced (about 1 cup)
3 ounces fresh snow peas, cut into thin strips (about 1 cup)
12 round rice paper wrappers (8 1/2-inch)
Asian Dipping Sauce (recipe follows)

1. Heat large nonstick skillet on medium heat. Add curry powder and garam masala; cook and stir 1 minute or until fragrant. Reserve 1 teaspoon of the spice mixture to season mushrooms. Sprinkle remaining spice mixture over chicken in medium bowl. Toss to coat well. Set aside.

2. Heat oil in same skillet on medium-high heat. Add mushrooms and reserved spice mixture; cook and stir 3 to 4 minutes or just until tender. Remove from skillet. Add bell pepper and snow peas to skillet; cook and stir 1 to 2 minutes or until tender-crisp. Remove from skillet.

3. To assemble Spring Rolls, fill 9-inch pie plate with warm water. Dip 1 rice paper wrapper in water to wet completely. Place on work surface. Blot dry with paper towel. Arrange 1/4 cup of the mushrooms, 2 tablespoons of the vegetable mixture and 2 tablespoons of the chicken in center of the rice paper wrapper. Fold bottom edge of rice paper wrapper over filling ingredients. Fold in sides, then gently roll tightly to enclose filling. Place spring roll on platter or tray. Cover with damp paper towels and plastic wrap. Repeat with remaining rice paper wrappers and filling ingredients to make 12 spring rolls. Refrigerate at least 30 minutes or up to 2 hours. Serve with Asian Dipping Sauce.

Asian Dipping Sauce: Mix 1/4 cup water, 2 tablespoons rice vinegar, 1 tablespoon light brown sugar, 2 teaspoons soy sauce and 1 teaspoon sesame oil in small bowl until well blended. Stir in 2 tablespoons finely chopped red onion.

Christina's Thai Peanut Noodle Salad

Thai Peanut Salad Dressing (save some time and make this part ahead!)

Start by bringing a pot of water to a boil. Add a spoonful of salt and then add your pasta. Drain when al dente and rinse with cold water. Add some dressing and stir to coat.

When you're ready to assemble the salad, place noodles, veggies, and chicken in a large bowl.

Christina's Cream of Chicken Soup

Yes, as in the concentrated variety... so as to not need to buy that nasty stuff in a can ever again! I was pleasantly surprised with how easy this recipe is and it tastes great!

from Our Best Bites

1 1/2 C chicken broth
1/2 teaspoon poultry seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon salt (or to taste)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk, divided
3/4 cup flour

In medium-sized saucepan, bring chicken broth, seasonings, and 1/2 c. of the milk to a boil. In a bowl, whisk together the remaining 1 cup of milk and flour.

Add to boiling mixture and continue whisking briskly until mixture boils and thickens (Side note: I used whole milk and it was instantly thick; I couldn't have had thinner soup if I wanted to! I think next time I will use whatever milk we are drinking so as to have some more control). Cook until desired consistency is reached, keeping in mind that it will continue to thicken as it stands.

Makes the equivalent of 2 cans of condensed cream of chicken soup.

Christina's Whole Roasted Chicken

from The Pioneer Woman Cooks

* 3-4lb Whole Chicken
* Something to stuff inside the chicken (Apple, Onion, Lemon, Garlic, Carrot, etc..)
* Canola Oil
* Salt and Pepper (1 1/2 T kosher salt, 1 1/2 t pepper)
* Fresh Herbs (1 -2 Tablespoons)

You can stuff various items into the chicken for roasting and this will provide additional moisture and aromatics that will help to flavor the chicken from the inside.

Preheat your oven to 450 degrees. Pick the herbs from their stems and chop them. Toss those herbs into a bowl and add in your salt and pepper. Add to that 2-3 tablespoons of Canola oil and mix together.

Stuff the aromatics into the nether regions of your chicken. Pat chicken dry with a clean cloth or paper towel. Begin rubbing the chicken down with your canola-herb-salt-pepper mix.

Slide your herb coated chicken into oven for an hour to an hour and fifteen minutes until they are golden brown and have developed a delicious crust. Once the chickens have roasted, let them rest for 10-15 minutes.

CPK's BBQ Chicken Pizza

from the Pioneer Woman Cooks

1 pizza crust
1 whole boneless, skinless chicken breasts
1/4 C barbecue sauce (try this one; we love it!) plus more for crust
olive oil, for drizzling
kosher salt for sprinkling
16 ounces fresh mozzarella cheese, thinly sliced (or just normal mozzarella works fine)
1/4 red onion, very thinly sliced
cilantro, chopped, to taste
Preheat oven to 375 degrees.
Salt chicken breast on both sides, then place in an ovenproof dish. Pour BBQ sauce over the breast and turn them over to coat. Bake for 20 to 25 minutes, or until chicken is done. Remove from oven and cut into a fine dice. Set aside.

Increase oven temperature to 500 degrees. Roll/stretch out pizza crust. Lay it on a sheet pan drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt. Spoon a couple of tablespoons of extra BBQ sauce on the crust and spread it evenly. Top sauce with half the sliced mozzarella. Sprinkle on half the diced chicken and thinly sliced red onion. Sprinkle again with a little salt, then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.

Remove from the oven and sprinkle on plenty of chopped cilantro. Cut and serve immediately.

Christina's Greek Pizza

original recipe

1 batch pizza dough
2 T Greek viniagrette dressing
1/2 small red onion, thinly sliced
1 chicken breast, cooked and shredded
1/2 tub of crumbled feta cheese (2 ounces)
1 eggplant, cut into 1/2 inch rounds and roasted (45 minutes in an oven at 450 degrees)
2 Roma tomatoes, sliced into rounds

Preheat oven to 500 degrees.

Press the pizza dough into a rimmed cookie sheet. Brush Greek vinaigrette onto dough. Top with all toppings except the tomato. Bake 15-20 minutes or until crust is browned. Take from oven, cut into slices and top each with a slice of tomato. Enjoy!

P.S. I am not an olive fan, but for those of you who are, I think this would be good with some olives on top. Also, I added some mozarella chunks because I had them leftover in my fridge from making rice balls and it was great, so if you have some mozarella feel free to add it!

Christina's Vietnamese Chicken

from Better Homes and Gardens

4 medium skinless, boneless chicken breast halves (about 1 pound total)
2 teaspoons toasted sesame oil
1/2 teaspoon crushed red pepper
2 tablespoons sugar
3 tablespoons peanut butter
2 tablespoons soy sauce (NOT dark soy sauce)
1 tablespoon cooking oil
1 clove garlic, minced
1/4 cup chopped peanuts (optional)

1. Combine sesame oil and crushed red pepper; brush over chicken.
2. Grill chicken on the lightly greased rack of an uncovered grill directly over medium heat for 12 to 15 minutes or until tender and no longer pink, turning once. Not having a grill, I put the chicken in a grill pan on my stove. Still tasted great.
3. Meanwhile, for sauce, in a small saucepan, stir together sugar, peanut butter, soy sauce, oil, garlic, and 2 tablespoons water. Heat on low until sugar is dissolved, stirring frequently.
