Christina's Honey-Walnut Pie

from Morgan Crumm

1 unbaked pie crust, fitted into a greased pie pan, placed on a baking sheet
2 cups walnut halves
3 large eggs
1 ¼ cups brown sugar
1/3 cup honey
4 T melted butter
¼ tsp fine salt
1 tsp pure vanilla extract
¼ cup flour
¼ tsp cinnamon
Dash cardamom

Preheat the oven to 350 degrees Fahrenheit, and make sure a rack is positioned in the center of the oven.

Prick the bottom of the pie crust all over with a fork.
Spread the walnuts out evenly in the unbaked pie crust. In a medium-sized bowl, whisk together the remaining ingredients. Pour this mixture over the walnuts. Cover the pie with aluminum foil, and bake for 35 minutes. Carefully remove the foil, rotate the pan in the oven, and bake an additional 32-35 minutes.  Don’t worry if the pie cracks slightly--this is normal and can actually be a good indication that the pie has cooked enough to set.

Allow the pie to cool at least 20 minutes to set before cutting.

The pie will keep, covered with aluminum foil, at room temperature for up to 5 days, but it is best eaten within 1-2 days.

Christina's Raw Apple Cake

adapted from Simply Recipes by Elise

Cake:
  • 1 cup unsweetened applesauce
  • 1/2 cup butter, melted
  • 2 cups of sugar
  • 3 eggs
  • 3 cups of white flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 3 cups chopped, peeled apples (varieties that are good for baking)
  • 3/4 cup of sweetened coconut
  • 1 cup of chopped nuts - walnuts or pecans

Glaze:
  • 1/2 stick sweet butter
  • 1 cup brown sugar
  • 3 tablespoons milk

Preheat oven to 350 degree F. Place coconut in a bowl and add 1/4 cup water. Set aside.

Beat together the sugar, applesauce and butter. Add the eggs and beat. In a separate bowl, sift together the flour, baking soda, salt, cinnamon and cardamom. Add dry ingredients to oil sugar eggs mixture in thirds, beating to incorporate after each addition.

Press excess liquid out of coconut with paper towels. Mix the vanilla, apples, coconut, and chopped nuts into the cake batter.

Bake in a greased and floured bundt cake pan or angel food cake pan 1 hour to 75 minutes. Test around the centers with a long thin bamboo skewer or toothpick to make sure the cake is done.

When cool enough to handle, gently remove from pan. Let sit on a rack to cool completely.

Add glaze ingredients to a small saucepan and cook until melted. Place the cake on its serving dish. Prick all around the top of the cake with a fork so that when the glaze is applied it easily seeps into the cake. Pour glaze onto cake slowly, making sure it enters holes.

Christina's Fennel and Fruit Salad, Two Ways

from Make and Takes
1 large fennel bulb, diced
2 stalks celery, diced
1 Granny Smith apple, cored and diced (peeled or unpeeled)
1/2 cup green onions, white and tender green parts only, sliced
juice 1 large navel orange (reserve zest for another use)
1-2 tsp. poppy seeds
dried cherries or cranberries
goat cheese or blue cheese, crumbled
drizzle of olive oil
salt and pepper, to taste
a handful of raw walnuts or pecans
Toss the fennel, celery, apple, green onions, cranberries, cheese and walnuts together in a large bowl. In a small bowl, whisk together the orange juice, olive oil, poppy seeds (if using) and season to taste with salt and pepper.
Drizzle the dressing over the veggies and fruit. Put a few big spoonfuls of the basic salad on a bed of greens and mix in.
Chicken Salad Recipe:
To the basic salad add:
A big spoonful of sour cream and/or mayo or yogurt (1/4 cup or so)
Chopped fronds of the fennel, to taste, but about 2 Tbsp. is great
A bit of grated orange zest
Cooked chicken (1-2 cups, canned or leftover is fine)
Serve on little rolls or croissants, or on its own, or on a bed of greens.
