Christina's Sweet Cherry Pie

adapted from Smitten Kitchen

Dough for a double-crust pie
4 cups pitted fresh cherries (about 2 1/2 pounds unpitted)
4 tablespoons cornstarch (4 teaspoons xanthan gum)
2/3 to 3/4 cup sugar (adjust this according to the sweetness of your cherries)
1/8 teaspoon salt
Juice of half a lemon
1/4 teaspoon almond extract

zest of one orange
1 tablespoon cold unsalted butter, cut into small bits

1 egg, beaten with 2 tablespoons water
Coarse sugar, for decoration

Preheat oven to 400°F.
Stir together the cherries, cornstarch, sugar, salt, lemon, almond extract and orange zest gently together in a large bowl.
Roll out half of chilled dough (use larger piece, if you’ve divided them unevenly) on a floured work surface to 13-inch round. Gently place it in 9-inch pie pan, either by rolling it around the rolling pin and unrolling it over the pan or by folding it into quarters and unfolding it in the pan. Trim edges to a half-inch overhang.
Spoon filling into pie crust, discarding the majority of the liquid that has pooled in the bowl. Dot the filling with the bits of cold butter.
Roll out the remaining dough into a 12-inch round on a lightly floured surface, drape it over the filling, and trim it, leaving a 1-inch overhang. Fold the overhang under the bottom crust, pressing the edge to seal it, and crimp the edge decoratively. Brush the egg wash over over pie crust, then sprinkle with coarse sugar.
Cut slits in the crust with a sharp knife, forming steam vents, and bake the pie in the middle of the oven for 25 minutes. Reduce the temperature to 350°F. and bake the pie for 25 to 30 minutes more, or until the crust is golden. Let the pie cool on a rack.

Christina's Homemade Ricotta Cheese

from Smitten Kitchen

3 cups 2% milk
1 cup heavy cream
1/2 teaspoon sea salt or kosher salt
3 tablespoons freshly squeezed lemon juice (or less if using from concentrate)

Pour the milk, cream and salt into a 3-quart nonreactive saucepan. Attach a candy or deep-fry thermometer. Heat the milk to 190°F, stirring it occasionally to keep it from scorching on the bottom. Remove from heat and add the lemon juice, then stir it once or twice, gently and slowly. Let the pot sit undisturbed for 5 minutes.

Line a colander with a few layers of cheesecloth and place it over a large bowl (to catch the whey). Pour the curds and whey into the colander and let the curds strain for at least an hour. At an hour, you’ll have a tender, spreadable ricotta. At two hours, it will be spreadable but a bit firmer, almost like cream cheese. Eat the ricotta right away or transfer it to an airtight container and refrigerate until ready to use. If making for use in beet ravioli, allow to drain for two hours.

Serve: On 1/2-inch slices of baguette that have been run under the broiler until lightly bronzed. Serve it simply with honey and a pinch of flaky sea salt, a couple grinds of black pepper, pinch of salt and drizzle of olive oil, and/or a few droplets of an aged balsamic. Or with zucchini ribbons: start with about half a pound of miniature zucchini. Larger ones will work just fine, but you might want to first cut a big one in half lengthwise. Peel them into ribbons and toss them with 1/4 teaspoon of salt and let them drain in a colander for a while (this wilts them), about 20 minutes. Rinse and pat them dry. Toss with lemon juice, olive oil, salt and black pepper to taste. Arrange in piles on ricotta crostini.

Christina's Red Velvet Cake with Beets

from Sophistimom

2 large beets (enough for at least 1 1/2 cups puree)
1/4 cup freshly squeezed lemon juice (juice of one lemon--if your lemon yields slightly too little juice, don't add more!)
1 cup coconut oil (chilled)

1 cup buttermilk
2 2/3 cups sugar
4 eggs
1 1/2 teaspoons pure vanilla extract
2 cups unbleached all-purpose flour
1 1/2 tsps baking powder
1 1/2 tsps kosher salt
4 TBSPS natural (not dark or dutch processed) cocoa powder

1. Preheat oven to 350 degrees. Place beets in a small baking dish and add a 1/2 cup of water. Cover with parchment paper and foil, and roast until quite tender, about 60-90 minutes. Allow to cool completely.
2. Butter 3 8 inch cake pans (I used 2 9-inch pans and then made some cupcakes with the extra batter). Cut out parchment paper circles and place in the bottoms of the pans. Butter the parchment paper and dust with flour. Set aside. Peel the beets and cut into large chunks. Place in a food processor (or a very good blender) with the lemon juice, and pulse until smooth and pureed.
3. In a mixer fitted with the paddle attachment, beat together coconut milk and sugar. Add in eggs, one at a time, mixing well until each is incorporated. Mix in vanilla. Set in refrigerator to chill.

4. While ingredients are mixing, whisk together four, baking powder, salt, and cocoa powder in a separate bowl. Slowly add flour mixture to the wet ingredients. Measure out 1 1/2 cups of the beet puree mixture, and fold into the cake batter. Divide the batter evenly between the cake pans. Tap pans on the counter to remove any air bubbles.
5. Bake at 350 degrees for 20-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Invert cakes onto cooling racks, and allow to cool completely. Wrap in plastic wrap and refrigerate or freeze until ready to frost.

Cream Cheese Frosting

2 packages cream cheese, at room temperature
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 pound (4 cups) confectioner’s (powdered) sugar
2-3 tablespoons heavy cream
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract

Combine all ingredients in the bowl of an electric mixer fitted with the paddle attachment. Switch to the whisk attachment, and mix until smooth and slightly fluffy.

Christina's Quinoa with Roasted Tomatoes

adapted from Smitten Kitchen's Pearl Couscous with Olives and Roasted Tomatoes

For roasted tomato dressing
1 1/2 lb Roma tomatoes
2 tsp minced garlic
1/4 cup extra-virgin olive oil
1/4 cup warm water
1 teaspoon fresh lemon juice
1 teaspoon salt
1/4 teaspoon black pepper

For quinoa
2 1/4 cups pearl (Israeli) couscous or quinoa
1 tablespoon olive oil
2 TBSP dried parsley
1 TBSP dried mint
1/2 tsp dried thyme

Roast tomatoes and make dressing:
Preheat oven to 250°F.

Halve tomatoes through stem ends and arrange, cut sides up, in 1 layer in a large shallow (1-inch-deep) baking pan. Roast in middle of oven until tomatoes are slightly shriveled around edges, about 1 hour. Cool in pan on a rack 30 minutes.

Purée with garlic, oil, water, lemon juice, salt, pepper, and tomatoes in a blender until dressing is very smooth.

Make quinoa:

Make quinoa according to package directions in chicken broth. Transfer to a bowl and stir in remaining ingredients, dressing and salt and pepper to taste. Eat and enjoy!

I also had a bit of leftover chicken, which I added. I think pork would taste good in this, too.

Christina's Curry Soup with Cauliflower

adapted from Angry Chicken

1-2 yellow diced onions
4-5 Yukon gold potatoes cubed
1 head cauliflower chopped
1 tsp curry powder
1/2 tsp turmeric
1 tsp cumin
1/2 tsp cayenne
salt and pepper
lemon juice for 1 lemon
2 cups chicken broth
coconut milk

In a bit of olive oil, saute the onions about 5-7 minutes. Add the spices and the potatoes and saute another 5 minutes. Add the chopped cauliflower. Then add the broth and a bit of water--you need to cover everything. Bring to a boil and then turn down to a simmer and cover. If you are in a hurry this will take about 40 minutes to cook, otherwise I let it simmer all day. Puree with the stick blender and then add the lemon juice and enough milk to change the color and make it creamy. Taste and add more salt/pepper/cayenne as needed.

Christinas' Lemon Ricotta Pancakes with Sauteed Apples

from Smitten Kitchen

For the sautéed apples
2 large Granny Smith apples, peeled, cored, and sliced
1 tablespoons unsalted butter
1.5 tablespoons sugar
1/4 teaspoon cinnamon
fresh lemon juice to taste

For the pancakes
2 large eggs, separated
2/3 cups ricotta
3/4 tablespoons sugar
3/4 tablespoons freshly grated lemon zest
¼ cup all-purpose flour
melted butter for brushing the griddle
maple syrup as an accompaniment

Prepare the sautéed apples:
In a large heavy skillet sauté the apples in the butter over moderately high heat, stirring occasionally, for 5 minutes, or until they are softened, sprinkle them with the sugar and the cinnamon, and cook them over moderate heat, stirring occasionally, for 5 to 10 minutes, or until they are tender. Stir in the lemon juice and keep the mixture warm.

Make the pancakes:
In a bowl whisk together the egg yolks, the ricotta, the sugar, and the zest, add the flour, and stir the mixture until it is just combined. In a bowl with an electric mixer beat the egg whites with a pinch of salt until they hold stiff peaks, whisk about one fourth of them into the ricotta mixture, and fold in the remaining whites gently but thoroughly. Heat a griddle over medium low. Working in batches, pour the batter onto the griddle by 1/4-cup measures and cook the pancakes for 1 to 2 minutes on each side, or until they are golden, brushing the griddle with some of the melted butter as necessary. Transfer the pancakes as they are cooked to a heatproof platter and keep them warm in a preheated 200°F. oven.

Serve the pancakes with the sautéed apples and the maple syrup.

Christina's Asparagus Risotto

from Simply Recipes by Elise

1 pound asparagus
3 Tbsp plus 1 teaspoon butter
1/2 cup chopped shallots
1 cup rice
1/2 cup dry white wine (or 1 Tbsp lemon juice and 1/4 cup water)
About 3 1/2 cups chicken stock
1/2 cup freshly grated Parmesan cheese

Salt and pepper

Prepare the asparagus by breaking off discarding the tough ends (about the last inch of the spear). Cut into 1 to 1 1/2-inch pieces (tips longer, base shorter). If your asparagus are especially large, cut into even smaller (bite-size) pieces. Bring a saucepan with a quart of water to a boil. Blanch the asparagus pieces for 2 minutes. At the end of two minutes, use a slotted spoon to remove the asparagus pieces to an ice water bath to shock the asparagus into a vibrant green color and to stop the cooking. Drain from the ice water bath and set aside.

In a 3 or 4 quart saucepan, heat 3 Tbsp butter on medium heat. Add the shallots and cook for a few minutes until translucent. Add the rice and cook for 2 minutes more, stirring until nicely coated.

While the shallots are cooking, bring the stock to a simmer in a saucepan.

Add the wine. Slowly stir, allowing the rice to absorb the wine. Once the wine is almost completely absorbed, add 1/2 cup of stock to the rice. Continue to stir until the liquid is almost completely absorbed, adding more stock in 1/2 cup increments. Stir often to prevent the rice from sticking to the bottom of the pan. Continue cooking and stirring rice, adding a little bit of broth at a time, cooking and stirring until it is absorbed, until the rice is tender, but still firm to the bite, about 15 to 20 minutes. Remove from heat. (Note the stock amount given is approximate. You may need a little more or less. If you end up needing more stock and you find yourself without, just use water or the cooking water from the asparagus.)

Gently stir in the Parmesan cheese, the remaining 1 teaspoon butter, and the asparagus. Add salt and pepper to taste. Serve immediately.

Christina's Cheesecake with Lemon Curd

from Epicurious

* 1 teaspoon finely grated fresh lemon zest
* 1/2 cup fresh lemon juice
* 1/2 cup sugar
* 3 large eggs
* 1/2 stick (1/4 cup) unsalted butter, cut into small pieces

For crust

* 1 1/3 cups finely ground graham cracker crumbs (5 oz)
* 1/3 cup sugar
* 3/4 teaspoon salt
* 5 tablespoons unsalted butter, melted

For filling

* 3 (8-oz) packages cream cheese, softened
* 1 cup sugar
* 3 large eggs
* 3/4 cup sour cream
* 1 teaspoon vanilla

* Accompaniment: blueberries (optional)

Make lemon curd:
Whisk together zest, juice, sugar, and eggs in a 2-quart heavy saucepan. Add butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 6 minutes.

Force lemon curd through a fine-mesh sieve into a wide shallow dish, scraping bottom of sieve, then cover surface with wax paper. Cool completely, stirring occasionally, about 30 minutes.

Make and bake crust:
Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan (to make it easier to slide cake off bottom), then lock on side. 3Stir together crust ingredients in a bowl, then press onto bottom and 1 inch up side of springform pan. Place springform pan in a shallow baking pan and bake 10 minutes, then cool crust completely in springform pan on a rack.

Make filling and bake cheesecake:
Reduce oven temperature to 300°F.

Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, 1 to 2 minutes. Reduce speed to low and add eggs 1 at a time, beating until incorporated. Beat in sour cream and vanilla until combined.

Pour two thirds of cream cheese filling into crust, then spoon half of lemon curd over filling and swirl curd into filling with a small knife. (Avoid touching crust with knife to prevent crumbs getting into filling.) Repeat with remaining filling and curd.

Bake cheesecake until set 1 1/2 inches from edge but center trembles when pan is gently shaken, about 45 minutes. (Center of cake will appear very loose but will continue to set as it cools.) Transfer springform pan to a rack and immediately run a knife around top edge of cake to loosen. Cool completely, about 2 hours, then chill, uncovered, at least 4 hours. Remove side of springform pan before serving.
