adapted from 101 Cookbooks
56ish ounces fresh tomatoes (roughly 8 large)
4 tablespoons unsalted butter, olive oil, or coconut oil
2 medium yellow onions, thinly sliced
1 teaspoon kosher salt, plus more to taste
3 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon chile flakes (less if feeding it to kids)
1 14-ounce can coconut milk
To serve: any of the following that sound good to you - cooked brown rice, lemon wedges, toasted almond slices, pan-fried paneer, fresh thyme or oregano, oregano drizzle, a poached egg
Slice tomatoes in half, seed and place cut side down on baking sheet. Roast at 275 degrees for a few hours. Remove from oven.
In a large pot over medium heat melt the butter. Add the onions and salt, and cook, stirring occasionally, until the onions really soften up - 10 minutes or so. Not so much that they brown, just until they're completely tender and unstructured.
Stir in the curry powder, coriander, cumin, and chile flakes, and cook just until the spices are fragrant and toasty - stirring constantly at this point. Just 30 seconds or so. Stir in the tomatoes and 6 cups of water. Simmer for fifteen minutes or so, then puree with a hand blender until smooth. Add coconut milk.
We served this over brown rice with spinach. Yummy!

Christina's Double Coconut Muffins
from Smitten Kitchen
1/2 cup virgin coconut oil
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon table salt
1 cup full fat Greek-style yogurt, at room temperature is best (or use coconut cream)
1/3 cup granulated sugar
1 large egg, at room temperature is best
1 teaspoon vanilla extract
3/4 cup sweetened shredded coconut, divided
Preheat oven to 375°F. Either grease 10 muffin cups with butter or coconut oil, or line them with papers.
In a small saucepan, warm your coconut oil just until it melts. It should still be on the cool side.
In a medium bowl, whisk together your flours, baking powder and salt. Stir 1/2 cup shredded coconut. In a separate bowl, whisk together egg, sugar, coconut oil, yogurt and vanilla. Stir into dry ingredients until just combined. Divide batter among prepared muffin cups then sprinkle the top with remaining 1/4 cup coconut, about 1 to 2 teaspoons on each.
Bake until a tester inserted into the center comes out batter-free, about 20 minutes. Transfer muffins to a rack and let cool.
You could make mango-coconut muffins by adding a cup or so of diced mango chunks to the batter; pina colada muffins would use the same volume of pineapple chunks. You could replace the yogurt with mashed banana or banana puree to make a banana-coconut muffin and if you’re into that whole lime-in-the-coconut thing, you could add a teaspoon of lime zest. Chocolate chips? (1 cup), Macadamia nuts? (1/2 to 3/4 cup, toasted and chopped). If adding a moist ingredient like mango or pineapple, reduce the amount of yogurt or coconut cream by 1/3.

Christina's Tropical Strawberry Shortcakes
adapted Our Best Bites and Throwdown with Bobby Flay
1 recipe Basic Baked Scones
4 C sliced fresh strawberries
½ C white sugar
4 T fresh-squeezed lime juice (about 2 limes)
Coconut Whipped Cream (from Throwdown)
1 1/2 cups cold heavy cream
1/4 cup coconut milk
2 tablespoons confectioners' sugar or granulated sugar
1/2 teaspoon pure vanilla extract
¾ C toasted coconut
Mix sliced strawberries, sugar, and lime juice. Stir well and set aside. Stir occasionally over about 15 minutes. You want the sugar to dissolve and form a light syrup.
For the coconut whipped cream combine the heavy cream, coconut milk, sugar and vanilla in a stand mixer and mix until soft peaks form.
Split scones in half (or slice angel food or pound cake) and layer on strawberry-lime mixture. Include some of the syrup. Place top half of scone on top and top with a generous dollop of the coconut whipped cream. Finally sprinkle with toasted coconut.
I also drizzled some sweetened condensed milk on the scones (underneath the whipped cream) and it was an awesome addition.

Christina's Curry Soup with Cauliflower
adapted from Angry Chicken
1-2 yellow diced onions
4-5 Yukon gold potatoes cubed
1 head cauliflower chopped
1 tsp curry powder
1/2 tsp turmeric
1 tsp cumin
1/2 tsp cayenne
salt and pepper
lemon juice for 1 lemon
2 cups chicken broth
coconut milk
In a bit of olive oil, saute the onions about 5-7 minutes. Add the spices and the potatoes and saute another 5 minutes. Add the chopped cauliflower. Then add the broth and a bit of water--you need to cover everything. Bring to a boil and then turn down to a simmer and cover. If you are in a hurry this will take about 40 minutes to cook, otherwise I let it simmer all day. Puree with the stick blender and then add the lemon juice and enough milk to change the color and make it creamy. Taste and add more salt/pepper/cayenne as needed.

Christina's Creamy Mac and Cheddar
from Smitten Kitchen
2 tablespoons butter
1 cup cottage cheese (not low fat)
2 cups milk (not skim)
1 teaspoon dry mustard
Pinch cayenne
Pinch freshly grated nutmeg (Deb note: I skipped this)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound sharp or extra-sharp cheddar cheese, grated (Deb note: I’m a big fan of Cabot extra-sharp, in the purple wrapper)
1/2 pound elbow pasta, uncooked.
1. Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to butter a 9-inch round or square baking pan.
2. In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper together.* Reserve 1/4 cup grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
3. Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.

Christina's Pork or Lamb Vindaloo
from Recipe Source
1 ½ Tbs grainy mustard
1 ½ tsp. ground cumin
¾ tsp. ground turmeric
½ to 1 tsp. cayenne pepper
1 tsp. salt
1 tsp. red wine vinegar (or any other)
3 Tbs. vegetable oil
1 small onion
6 large, peeled, crushed garlic cloves
1 ¼ lbs. boned shoulder of pork or lamb cut to 1 in. cubes*
2/3 cup canned coconut milk, well stirred
Combine mustard, cumin, turmeric, cayenne, salt, vinegar in a cup. Mix well. Put the oil in a large, nonstick frying pan and set over medium-high heat. When the oil is hot, put in the onions. Stir and fry until it is medium brown. Put in the garlic. Stir and fry for 20 seconds. Put in the spice paste. Stir and fry for one minute. Put in the meat. Stir and fry for about 3 minutes. Now add the coconut milk and 2/3 cup water if you are going to cook in a pressure cooker or 1 cup water if you are going to continue to cook in the frying pan. (Transfer to a pressure cooker at this stage if that is your intention.) Cover and either bring up to pressure, or bring to a boil if you are using the frying pan. Lower the heat to a simmer and cook for 20 minutes in the pressure cooker and 60 to 70 minutes in the frying pan. Serves 3-4.
*The recipe says to throw the meat in after you've cooked the onions, garlic, and spice paste. If you do it this way, all the fat that cooks off the meat will rise to the top of the sauce. It's a huge pain to remove. Some of the fat may also come from the oil initially added to the onions. I suggest stir frying the meat on the side, pouring off the fat, and THEN adding it to the mixture. Crock pots also work well.
