Christina's Eggplant Pasta with Bacon

original recipe

1 pound pasta (rotini, radiatori or anything similar is good)

1/2 onion, diced
4 strips bacon, chopped into bitesize pieces
1 large eggplant, diced
1 T minced garlic
1/4 tsp red pepper flakes
2 15 oz cans diced Italian tomatoes in olive oil
1 15 oz can tomato sauce

salt and pepper

Make pasta according to package directions and set aside.

In large skillet, saute bacon and onion until fat is rendered and onion begins to soften. Add eggplant and cook 3-5 minutes or until eggplant begins to get soft. Add garlic and red pepper flakes and saute until eggplant is completely cooked. Add cans of tomatoes and tomato sauce and heat through. Add salt and pepper to taste.

Toss with pasta and serve.

Christina's Greek Pizza

original recipe

1 batch pizza dough
2 T Greek viniagrette dressing
1/2 small red onion, thinly sliced
1 chicken breast, cooked and shredded
1/2 tub of crumbled feta cheese (2 ounces)
1 eggplant, cut into 1/2 inch rounds and roasted (45 minutes in an oven at 450 degrees)
2 Roma tomatoes, sliced into rounds

Preheat oven to 500 degrees.

Press the pizza dough into a rimmed cookie sheet. Brush Greek vinaigrette onto dough. Top with all toppings except the tomato. Bake 15-20 minutes or until crust is browned. Take from oven, cut into slices and top each with a slice of tomato. Enjoy!

P.S. I am not an olive fan, but for those of you who are, I think this would be good with some olives on top. Also, I added some mozarella chunks because I had them leftover in my fridge from making rice balls and it was great, so if you have some mozarella feel free to add it!

2 c coarsely chopped cabbage
2 c chopped onions
1 ½ c cubed eggplant (1-inch pieces) (about half a medium eggplant)
1 t ground turmeric
½ t ground cinnamon
½ t ground ginger
1/8 t ground allspice
1/8 t saffron threads (or ½ tsp turmeric)
2 c broth or water

Christina's Grilled Eggplant with Caponata Salsa

from Smitten Kitchen

1 12-ounce container grape or cherry tomatoes, quartered lengthwise
2 celery stalks, finely diced
1/4 cup chopped onion
2 tablespoons (2 tsp dried) coarsely chopped fresh oregano plus sprigs for garnish
1 tablespoon drained capers, rinsed
1 garlic clove, minced
Pinch of dried crushed red pepper
3 tablespoons red wine vinegar
1 tablespoon extra-virgin olive oil plus additional for brushing
1 large eggplant (1 1/2 to 13/4 pounds), trimmed

Mix tomatoes, celery, onion, olives, chopped oregano, capers, garlic, and crushed red pepper in medium bowl. Whisk red wine vinegar and 1 tablespoon extra-virgin olive oil in small bowl; pour over tomato mixture and toss to coat. Season caponata to taste with salt and pepper. (Caponata can be prepared 2 hours ahead. Let stand at room temperature.)

Prepare barbecue (medium-high heat). Peel eggplant lengthwise to create alternating 2-inch-wide intervals of peeled and unpeeled skin. Cut eggplant crosswise into 6 slices, each about 1 inch thick. Brush eggplant slices with oil; sprinkle with salt and pepper. Grill eggplant slices until slightly charred and very tender when pierced with knife, about 8 minutes per side.

Place 1 grilled eggplant slice on each of 6 plates. Spoon caponata over, garnish with oregano sprigs, and serve warm or at room temperature.

Christina's Ratatouille Tart

from Smitten Kitchen

14 ounces frozen puff pastry, defrosted in the fridge overnight
1 Asian eggplant
1 smallish zucchini
1 smallish yellow squash
1 longish red bell pepper
1/3 cup tomato puree (such as Pomi) or canned plain tomato sauce
2 tablespoons olive oil
Salt and pepper
Few sprigs fresh thyme
1 cup crumbled feta

Heat the oven to 375°F. Lightly flour a work surface, lay the sheet of pastry out, and gently roll until it measures about 11 x 15 inches. Slide the pastry onto a baking sheet lined with parchment paper. Prick the pastry all over with a fork, at about 1-inch intervals.

Spread the tomato puree or sauce evenly over the pastry, leaving a one-inch border around the edges.

Trim the ends off the eggplant, zucchini and yellow squash. As carefully as you can, trim the ends off the red pepper and remove the core, leaving the edges intact, like a tube.

On a mandoline, adjustable-blade slicer or with a very sharp knife, cut the eggplant, zucchini, yellow squash and red pepper into very thin slices, approximately 1/16-inch thick.

Arrange slightly overlapped slices of vegetables concentrically or in rows over the tomato puree or sauce, alternative vegetables. You’ll probably have a few leftover.

Drizzle vegetables with olive oil, season with salt and pepper and sprinkle de-stemmed thyme leaves over the vegetables.

Bake in the heated oven until the pastry is puffed and browned (including on the bottom), 25 to 30 min and the vegetables look softened. Slide onto a cutting board, sprinkle with the feta, and cut into squares or strips. (A pizza wheel worked surprisingly well for this.) Serve warm.

Christina's Chicken Breast With Eggplant, Shallots and Ginger

from Bitten

* 8 ounces shallots (about 6 large)
* 1/4 cup neutral oil, like canola or grapeseed
* 1 to 1 1/4 pounds eggplant, cut into 1-inch cubes
* Salt and freshly ground black pepper
* 2 tablespoons minced fresh ginger or 2 teaspoons dried ginger
* 1 1/2 pounds skinless, boneless chicken breasts (4 half breasts)
* 1/4 cup or more minced fresh cilantro

1. Peel shallots. If they are small, leave them whole. Otherwise, cut them in half the long way. (Most large shallots have two lobes and will naturally divide in half as you peel them.) Heat the broiler or a gas or charcoal grill.

2. Place oil in a large nonstick skillet, and turn heat to medium high. Add shallots, and cook about 5 minutes, stirring occasionally, until they begin to brown. Add eggplant, salt and pepper, and lower heat to medium. Cook, stirring occasionally, until eggplant softens, about 15 minutes.

3. When eggplant begins to brown, add half the ginger, and cook 3 minutes or so more, until eggplant is very tender and the mixture fragrant.

4. Meanwhile, rub chicken breasts with salt, pepper and remaining ginger. Grill about 4 inches from the heat source for 3 minutes a side or until done.

5. Stir half the cilantro into eggplant mixture. Serve chicken breasts on a bed of eggplant. Garnish with remaining cilantro.
