original recipe
1 whole roasting chicken or 4 chicken thighs
1 small onion, chopped and divided
1 lemon, cut into 1/8ths and divided
1 cup chicken broth
1/2 C white wine
2 tsp dry rosemary
salt and pepper
Brown chicken in pan. Set aside.
Add 1/2 onion to slow cooker. Add 1/2 lemon (4 pieces). Add chicken. Add remaining lemon. Add remaining onion. Add 1 tsp rosemary. Pour chicken broth and wine over. Sprinkle remaining rosemary. Salt and pepper to taste.
Cook on high 1 hour then lower to low for 3-4 hours or until chicken juices run clear. Serve with rice or potatoes and another vegetable side such as sauteed green beans and carrots or salad.

Christina's Tuna Salad
from my mom
5 5 oz. cans tuna, drained and flaked
1 C mayonnaise or Miracle Whip
3/4 C diced celery
2 C shredded carrot
1/3 C chopped sweet pickle (or sweet pickle relish)
1 1/2 TBSP minced or grated onion
Mix it all together. Serve cold on sandwiches or make into tuna melts. So yummy!

Christina's Shrimp in Tomato Feta Sauce
from Simply Recipes by Elise
1 Tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 14.5-ounce cans of diced tomatoes (or fresh)
1/4 cup minced fresh parsley
1 Tbsp minced fresh dill or 1 teaspoon dried dill
1 to 1 1/4 pounds medium sized cooked shrimp, peeled and deveined (can leave tails on), thaw if frozen
Pinch of salt, more to taste
Pinch black pepper, more to taste
1 Cup feta cheese, crumbled
1 Preheat oven to 425°F. Heat oil in a large, oven-proof skillet on medium high heat. Add the onions and cook until softened, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds more.
2 Add the tomatoes and bring to a simmer, reduce heat and let simmer for 5-10 minutes, until the juices thicken a bit.
3 Stir in the herbs, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 10-12 minutes. Add shrimp and cook through.
Serve immediately. Serve over polenta or pasta or with crusty French or Italian loaf bread.

Christina's Slow Cooker Herbed Beef Stew (or Roast)
1 1/2 pounds cubed beef stew meat (or roast)
4 carrots, sliced
3 potatoes, cubed
2 onions, diced
1 tsp salt
1 tsp paprika
1/4 tsp pepper
1 C water, 2 cubes beef bouillon
1 tsp Worcestershire sauce
1 garlic clove
1 bay leaf
1/2 tsp dried basil
1 tsp dried parsley
1 tsp dried marjoram
If making stew, toss meat with 1 cup flour. Otherwise, just put everything in the crock pot and mix well. Cover and cook 4-6 hours on high or 10-12 hours on low.

Christina's Tomato, Kale and Quinoa Salad

Quinoa:
2 cups quinoa
3 ½ cups water
pinch sea salt

Salad:
2 large heirloom tomatoes, diced (about 3 to 4 cups)
2 large heirloom tomatoes, diced (about 3 to 4 cups)
1 cup finely diced walla walla onion (or other variety of sweet onion or substitute green onion)
1/2 bunch kale, finely chopped
1 cup chopped basil leaves
feta cheese to taste
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
1 teaspoon sea salt
freshly ground black pepper, to taste
Soaking quinoa overnight in a bowl of water, then drain the next day. To cook the quinoa, rinse the quinoa in a fine mesh strainer under running water. Drain well. Place quinoa into a 2-quart pot, add water and salt; cover and bring to a boil. Then reduce heat to low and simmer for about 15 to 20 minutes. Remove pot from heat and let cool completely before using.
To assemble the salad, place the cooled quinoa into a large bowl and fluff with a fork. Add the remaining ingredients and gently toss together. Serve.

Christina's Cherry Tomato Pasta

1 pound pasta (I like whole wheat spaghetti.)
2 pints (1 quart) ripe cherry tomatoes
2 Tablespoons olive oil
3 or 4 cloves garlic, minced
1/2 onion, diced
1/2 cup dry white wine
1/4 Cup fresh basil, chopped (or can use dried)
Salt and pepper
Optional spice add-ins: Red pepper flakes, dried marjoram, dried oregano, all to taste.
2 Tablespoons olive oil
3 or 4 cloves garlic, minced

1/2 cup dry white wine
1/4 Cup fresh basil, chopped (or can use dried)
Salt and pepper
Optional spice add-ins: Red pepper flakes, dried marjoram, dried oregano, all to taste.
Parmesan cheese for grating
Dice up the onion and garlic and then heat up the biggest wide pan you have or a dutch oven. Add your oil to the pan and get it hot over medium high heat. Add the onions and garlic and get them cooking for a few minutes.
Wash all your cherry tomatoes and throw them in. Don’t worry about peeling them or coring them. After the tomatoes begin to pop and wilt, turn the heat down to medium, add any extra spices you like (including salt and pepper and the basil if you are using dried) and let this simmer and reduce until it forms a pretty solid paste, about 25 minutes. Stir occasionally.
Meanwhile, begin boiling salted water for the pasta and cook pasta according to package directions.
As your pasta cooks, add your white wine to the tomatoes and use the liquid to scrape up any little bits that are in the pan. Also add the chopped basil if you are using fresh. Stir this all together and turn the heat down to low on the sauce. The white wine should evaporate pretty quickly. When the pasta is ready, drain (or simply add pasta to the sauce if it's quite thick) and serve.

Christina's Apple, Chard and Mushroom Quiche

- 1 Tbs. olive oil
- 1 Tbs. unsalted butter
- 1 large Vidalia or other onion, thinly sliced
- 1 cup (4 oz.) shredded ruby Swiss chard
- 1 cup (about 2 oz.) thinly sliced mushrooms
- Salt and freshly ground black pepper to taste
- ½ cup chopped apple
- 2 Tbs. all-purpose flour
- ½ tsp. ground nutmeg
- 4 large eggs
- 1 cup shredded Jarlsberg or Swiss cheese
- ½ cup milk
- 1 9-inch deep-dish pie crust, unbaked
1. Preheat oven to 375°F.
2. Heat oil and butter in large skillet over medium heat. Reduce heat to medium-low, and sauté onions until caramelized, about 15 minutes.
3. Add Swiss chard, mushrooms, salt and pepper. Increase heat to medium, and cook, stirring often, until mushrooms and chard are soft, about 7 minutes.
4. Combine apples, flour and nutmeg in mixing bowl, and toss to coat apples. Combine eggs, cheese and milk in separate bowl, and beat until ingredients are well blended. Fold in apple mixture.
5. Spoon chard mixture into pie crust. Pour egg-cheese-apple mixture over top.
6. Bake 35 to 45 minutes, or until cheese mixture is set and top is browned. Cool slightly before slicing, and serve.

2 Tbsp. butter
1 green bell pepper
1 medium yellow onion
White cheese (mozzarella or Swiss or provolone or Monterey Jack)
Kosher salt and freshly-ground black pepper
Cream cheese (4 oz?)Cholula hot sauce (optional)
8 Hoagie rolls
Thinly slice bell peppers and onions (preferably in the food processor). Set aside. Thinly slice frozen meat (again, food processor). Set aside. Heat 2 Tbsp. butter over medium-high heat in a large skillet. Add steak and stir-fry. Season heavily with salt and lots of freshly-ground pepper. When meat is about half-cooked, add peppers and onions. Stir occasionally, cooking until meat is cooked through. Season with hot sauce to taste.
Slice buns, smear with cream cheese and spoon steak mixture inside. Top with cheese and place under broiler for 1-2 minutes or until cheese is melted and bread is slightly toasty.

Christina's Spiced Roasted Tomato Soup

56ish ounces fresh tomatoes (roughly 8 large)
4 tablespoons unsalted butter, olive oil, or coconut oil
2 medium yellow onions, thinly sliced
1 teaspoon kosher salt, plus more to taste
3 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon chile flakes (less if feeding it to kids)
1 14-ounce can coconut milk
To serve: any of the following that sound good to you - cooked brown rice, lemon wedges, toasted almond slices, pan-fried paneer, fresh thyme or oregano, oregano drizzle, a poached egg
Slice tomatoes in half, seed and place cut side down on baking sheet. Roast at 275 degrees for a few hours. Remove from oven.
In a large pot over medium heat melt the butter. Add the onions and salt, and cook, stirring occasionally, until the onions really soften up - 10 minutes or so. Not so much that they brown, just until they're completely tender and unstructured.
Stir in the curry powder, coriander, cumin, and chile flakes, and cook just until the spices are fragrant and toasty - stirring constantly at this point. Just 30 seconds or so. Stir in the tomatoes and 6 cups of water. Simmer for fifteen minutes or so, then puree with a hand blender until smooth. Add coconut milk.
We served this over brown rice with spinach. Yummy!

1. In large skillet over medium high heat, brown the diced chicken pieces and onion in oil.
2. Add diced bell pepper and garlic and stir-fry for 1 to 2 minutes.
3. In small bowl, whisk together corn starch and soy sauce, then pour the mixture into skillet along with the pineapple chunks, pineapple juice, vinegar, brown sugar, and ginger. Christina's Chicken, Sausage and White Bean Soup

Fall Style Chicken Stew with Sausage and Beans
2 tablespoons extra virgin olive oil
1 - 1 1/2 pounds skinless chicken
2 tablespoons extra virgin olive oil
1 pound carrots, peeled and cut
4 stalks celery, cut
1 large onion, diced
12 ounces cooked sausage links (andouille or other), sliced
2 15 ounce cans White Beans, drained and rinsed
4 tablespoons butter
4 tablespoons all purpose flour
4 cups chicken broth
kale (optional)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic salt
1. Preheat oven to 350 degrees F.
2. Place oil into large Dutch oven over medium heat. Season each chicken breast with a pinch of salt and pepper then place into hot oil. Cook for 5 minutes each side, until golden brown. Once golden brown, reduce heat and cook until cooked through. Remove chicken and transfer to large plate or cutting board. Let rest for 10 minutes then chop or shred.
3. Place same Dutch oven with chicken drippings over medium heat. Add carrots, celery and onion cooking until tender, about 15 minutes, stirring frequently. Add sliced sausage and beans, stirring to combine. Reduce heat to low.
4. Place butter into a medium pot over medium heat. Once melted whisk in flour until thick and combined. Slowly add chicken broth. Will start out thick, keep whisking and slowly add remaining broth. Whisk for a good 5 minutes then transfer to pot of vegetables. Add kale and cook until wilted. Season with salt, pepper and garlic salt, stirring to combine. Reduce heat to low and let simmer until ready to serve. Garnish with fresh rosemary, if desired.

Christina's Moroccan Rib Roast

2 tablespoons coriander seeds, crushed
2 tablespoons finely shredded lemon peel
1 tablespoon olive oil
1 teaspoon whole cumin seeds, crushed (or just use a few dashes of cumin)
1/2 to 1 teaspoon crushed red pepper flakes
1/2 teaspoon coarse salt
1 4- to 5-pound beef rib roast (I used country-style pork rib chops instead)
8 cloves garlic, peeled and cut into slivers
Assorted peeled and cut-up vegetables, such as carrots, turnips, and sweet peppers
1. In a small bowl stir together coriander seeds, lemon peel, olive oil, cumin, red pepper, and salt. Rub surface of meat thoroughly with coriander mixture.
2. Cut 1/2-inch-wide slits randomly into top and sides of meat. Insert garlic slivers deep into slits. If desired, cover and chill meat for up to 24 hours.
3. Prepare grill for indirect grilling. Test for medium heat above the drip pan. Place meat on the lightly oiled grill rack over the drip pan.
4. Cover and grill for 1-1/2 to 2 hours or until an instant-read thermometer inserted into the center of the meat registers 155 degree F for medium doneness. Add assorted cut-up vegetables to grill during the last 45 minutes of grilling, removing and setting them aside as they become tender. Carve meat and serve with the grilled vegetables. Makes 8 to 10 servings.
Test Kitchen Tip: You may prepare this recipe using leg of lamb instead of a beef rib roast as part of a more authentic Moroccan feast. For a 3- to 4-pound leg of lamb, grill for 2 to 3 hours or until a meat thermometer registers 155 degree F for medium doneness.

Christina's Sweet Potatoe and Swiss Chard Gratin
adapted from Smitten Kitchen
1/4 cup butter
1 small onion, finely chopped
2 leeks, minced
1 1/2 pounds Swiss chard, leaves and stems separated and both cut into 1-inch pieces
Pinch of freshly grated nutmeg
2 cups heavy cream or whole milk
2 garlic cloves, minced
2 tablespoons flour
2 pounds medium red-skinned sweet potatoes (yams), peeled and cut into 1/8-inch thick rounds
1 teaspoon dried parsley
1 teaspoon dried thyme
kosher salt
Freshly ground black pepper
1 1/4 cups (about 5 ounces) coarsely grated Gruyére, Havarti or other appropriate cheese
Prep greens: Cook onion in 2 tablespoons butter in a wide 8-quart heavy pot over moderately low heat, stirring, until softened. Add chard stems and leek, pinch of nutmeg, and salt and pepper to taste and cook, stirring, until vegetables are tender but not browned, about 8 minutes. Increase heat to moderately high and add chard leaves by large handfuls, stirring, until all greens are wilted. Season with salt and pepper then transfer greens to a colander to drain well and press out liquid with back of a large spoon.
Make sauce: Combine cream or milk and garlic in small saucepan; bring to simmer; keep warm. Melt two tablespoons butter in a medium heavy saucepan over moderate heat and stir in flour. Cook roux, whisking, one minute, then slowly whisk in warm cream/milk and boil, whisking, one minute. Season sauce with salt and pepper.
Assemble gratin: Preheat oven to 400°F. Butter deep 9×13 baking dish. Spread half of sweet potatoes in the prepared baking dish. Sprinkle with salt, pepper and. Distribute half of the greens mixture over the potatoes, then sprinkle salt, pepper, half of the herbs and 1/2 cup of the cheese over it. Pour half of bechamel sauce over the layers then continue with the remaining sweet potatoes, more salt and pepper and then the remaining greens, salt, pepper and herbs and 1/2 cup c. Pour the remaining sauce over the top of the gratin, pressing the vegetables slightly to ensure that they are as submerged as possible. Sprinkle with the last 1/4 cup of cheese.
Bake gratin for about 1 hour until golden and bubbly, and most of the liquid is absorbed. Let stand 10 minutes before serving.
Do ahead: You can make the entire gratin but not bake it up to a day in advance and keep it in the fridge.

1 1/2 pounds Swiss chard, leaves and stems separated and both cut into 1-inch pieces
Pinch of freshly grated nutmeg
2 cups heavy cream or whole milk
2 garlic cloves, minced
2 tablespoons flour
2 pounds medium red-skinned sweet potatoes (yams), peeled and cut into 1/8-inch thick rounds
1 teaspoon dried parsley
1 teaspoon dried thyme
kosher salt
Freshly ground black pepper
1 1/4 cups (about 5 ounces) coarsely grated Gruyére, Havarti or other appropriate cheese
Prep greens: Cook onion in 2 tablespoons butter in a wide 8-quart heavy pot over moderately low heat, stirring, until softened. Add chard stems and leek, pinch of nutmeg, and salt and pepper to taste and cook, stirring, until vegetables are tender but not browned, about 8 minutes. Increase heat to moderately high and add chard leaves by large handfuls, stirring, until all greens are wilted. Season with salt and pepper then transfer greens to a colander to drain well and press out liquid with back of a large spoon.
Make sauce: Combine cream or milk and garlic in small saucepan; bring to simmer; keep warm. Melt two tablespoons butter in a medium heavy saucepan over moderate heat and stir in flour. Cook roux, whisking, one minute, then slowly whisk in warm cream/milk and boil, whisking, one minute. Season sauce with salt and pepper.
Assemble gratin: Preheat oven to 400°F. Butter deep 9×13 baking dish. Spread half of sweet potatoes in the prepared baking dish. Sprinkle with salt, pepper and. Distribute half of the greens mixture over the potatoes, then sprinkle salt, pepper, half of the herbs and 1/2 cup of the cheese over it. Pour half of bechamel sauce over the layers then continue with the remaining sweet potatoes, more salt and pepper and then the remaining greens, salt, pepper and herbs and 1/2 cup c. Pour the remaining sauce over the top of the gratin, pressing the vegetables slightly to ensure that they are as submerged as possible. Sprinkle with the last 1/4 cup of cheese.
Bake gratin for about 1 hour until golden and bubbly, and most of the liquid is absorbed. Let stand 10 minutes before serving.
Do ahead: You can make the entire gratin but not bake it up to a day in advance and keep it in the fridge.

Christina's Crock Pot Beef and Balsamic Onions
from $5 Dinners
1 2.6 lb. beef roast
2 onions, sliced
4 garlic cloves, crushed
1/4-1/2 cup balsamic vinegar
Salt and pepper
2 onions, sliced
4 garlic cloves, crushed
1/4-1/2 cup balsamic vinegar
Salt and pepper
1. In a large pot, sear or brown the beef roast on all sides in a little olive oil.
2. Slice onions into strips. Crush garlic clove with flat part of the knife.
3. Place seared roast into slow cooker with the oil that it was seared in. Season with salt and pepper. Add sliced onions and smooshed garlic around the roast. Sprinkle about 1/4-1/2 cup balsamic vinegar into the slow cooker.
4. Cook on low for 8 hours.

Christina's Chicken and Andouille Jambalaya

2 tablespoons canola oil
1 1/2 cups andouille sausage (about 7 1/2 ounces), cut into (1/4-inch-thick) slices
3 cups finely chopped red bell pepper
3 cups finely chopped yellow onion
2 cups finely chopped celery
2 bay leaves
2 1/2 cups chopped skinless, boneless chicken breast
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 1/2 teaspoons finely chopped jalapeño pepper
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground red pepper
3 garlic cloves, minced
1/2 cup tomato puree
2 3/4 cups less-sodium chicken broth
1 1/2 cups basmati rice
1 cup thinly sliced green onions
Heat oil in a large Dutch oven over medium-high heat. Add sausage; cook until sizzling quiets (about 8 minutes), stirring occasionally. Add bell pepper, onion, celery, and bay leaves; cook until vegetables are golden brown, sizzle loudly, and begin to squeak (about 14 minutes), stirring occasionally. Add chicken and next 8 ingredients (through garlic); cook 4 minutes, stirring occasionally. Add tomato puree; cook 2 minutes, stirring occasionally. Add broth, and bring to a boil. Stir in rice. Cover, reduce heat, and simmer 20 minutes. Discard bay leaves. Stir in green onions.

Christina's White Bean, Rice and Spinach Soup
Ingredients
3 14-ounce cans vegetable broth
1 15-ounce can tomato puree
1 15-ounce can white or Great Northern beans, rinsed and drained
1/2 cup uncooked rice
1/2 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon dried basil, crushed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 cups coarsely chopped fresh spinach or kale leaves
Finely shredded Parmesan cheese
Directions
1. In a 3-1/2- or 4-quart slow cooker combine broth, tomato puree, beans, rice, onion, garlic, basil, salt, and pepper.
2. Cover; cook on low-heat setting for 5 to 7 hours or on high-heat setting for 2-1/2 to 3-1/2 hours.
3. Stir spinach into soup. Serve with Parmesan cheese. Makes 6 main-dish servings.

Lorri's Cauliflower Soup
Coarse salt and coarse black pepper
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 small heads cauliflower, or 1 large, cut into small bunches of florets
3 ribs celery and leafy tops from the heart of stalk, finely chopped
1 medium onion, chopped
2 tablespoons chopped fresh thyme leaves
2 tablespoons all-purpose flour
1 quart chicken broth
1 cup half-and-half or whole milk
3 tablespoons chopped fresh parsley leaves or chives, for garnish
1/2 cup grated Parmesan, for passing at the table
In a large pot, heat up the olive oil and 2 tablespoons of the butter, over medium heat. Season with salt and pepper. Add the cauliflower florets and stir with a wooden spoon. Add celery, onion and thyme and cook for 3 minutes.
Push the vegetables to 1 side of the pot. Melt 1 more tablespoon of butter on empty side of pot and add flour to the butter. Cook for 1 minute, stirring the flour in the butter. Mix in chicken broth and half-and-half. Bring up to a simmer and cook for 15 minutes. Puree soup using an immersion blender, food processor or blender and return to pot.
Check seasoning and add a dash of hot sauce, if desired. Garnish soup with hot pepper sauce, chopped parsley or chives and serve with grated cheese sprinkled on top.

4 pork loin chops (about 12 ounces total)
2 teaspoons cooking oil
1 large onion, thinly sliced and separated into rings
2 tablespoons water
1/2 cup dried sweetened cranberries
3 tablespoons water
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon finely shredded orange peel
1/2 teaspoon ground sage
1/4 teaspoon salt
1. In a small bowl stir together pepper and celery salt; rub onto both sides of chops. In a medium skillet heat oil over medium-high heat. Cook chops and onion rings in hot oil until chops are browned, turning once. Carefully add the 2 tablespoons water to skillet. Cover and cook over medium heat for 15 to 20 minutes more or until no pink remains and juices run clear. Transfer chops to serving plates; keep warm. Remove onions from juices with a slotted spoon; set aside.
2. Meanwhile, for the sauce, in a medium saucepan combine the cranberries, the 3 tablespoons water, the orange juice concentrate, orange peel, sage, and salt. Cook and stir over medium heat about 10 minutes or until the cranberries plump and mixture thickens. Stir in the onions; heat through. Remove from heat.

Christina's Glazed Chicken and Vegetables
Ingredients
1 2 1/2- to 3-pound whole broiler-fryer chicken
Cooking oil
2 medium potatoes, peeled and quartered
6 carrots, bias cut into 1/2-inch-thick slices
1/2 cup honey
1/4 cup prepared mustard
2 tablespoons margarine or butter
2 tablespoons finely chopped onion
2 teaspoons curry powder
1/2 teaspoon garlic salt
1/4 teaspoon crushed red pepper
1/4 teaspoon ground ginger
2 medium apples, cored and cut into wedges
Directions
1. Skewer chicken's neck skin to back. Tie legs to tail. Twist wing tips under back. Place chicken, breast side up, on a rack in a shallow roasting pan; brush with cooking oil.
2. Insert an oven-going meat thermometer into center of an inside thigh muscle, making sure bulb does not touch bone. Roast, uncovered, in a 375 degree F oven for 1 hour.
3. Meanwhile, in a medium saucepan cook potatoes and carrots in a large amount of boiling water for 20 to 25 minutes or until nearly tender; drain.
4. For glaze, in a small saucepan combine honey, mustard, margarine or butter, onion, curry powder, garlic salt, crushed red pepper, and ginger. Bring to boiling, stirring constantly. Remove from heat; set glaze aside.
5. Discard fat in roasting pan. Arrange potatoes, carrots, and apples around chicken in pan. Spoon glaze over chicken, vegetables, and apples. Roast for 15 to 20 minutes more or until meat thermometer registers 180 degree F. At this time, drumsticks move easily in their sockets and chicken is no longer pink. Remove chicken from oven; cover and let stand 10 minutes before carving. Makes 6 servings.
